Amish Breakfast

Baked Oatmeal

2/3 cup oil
1 cup sugar
2 eggs, beaten

Mix the above ingredients together well then add:

4 cups oatmeal
3 tsp. baking powder
1 tsp. salt
1 1/2 cups milk
2 apples peeled and chopped
1 tsp. cinnamon
chopped walnuts

Pour into a greased 8" cake pan. Bake at 350 degrees for 25-30 minutes. Cut into 8 pieces and serve with milk.

I had this for breakfast in an Amish restaurant in Intercourse, PA. It was delicious and a great way to start the day.
